Mix soy sauce, ginger, brown sugar, and water in a pan and bring it to a boil. Add a little cornstarch so that the sauce can thicken and put back all the remaining ingredients. Use button mushrooms and remove the stems. Put the stems and some shallots in a food processor until they are chopped finely. In baking sheet, put the mushrooms top-side down. Sprinkle with olive oil and season with salt and pepper, to taste. In a pan, cook the pancetta until golden brown and set aside. In the same pan, cook the shallot-mushroom mixture until soft and add chopped spinach. When cooked, carefully add whipping cream and stir in until slightly thick. Add parmesan and mozzarella and stir until the cheese melts in beautifully. Put a spoonful of the mixture in the mushroom tops, and bake until the cheese bubbles. Serve with wine and enjoy!

Remove the mushroom stems and serve the mushroom top-side down. Season with salt and pepper, to taste. Mix vinegar, oil, basil, oregano, and garlic together and carefully pour it over the mushrooms. Set aside some of the mix for basting and cook the mushrooms in the grill. Bast frequently and grill the mushrooms for 5 minutes on each side. Add in some provolone cheese. Serve it with wheat bread and some tomatoes, mustard, lettuce, and onions for that classic burger taste.
