Another happy farmer’s market find, the pimento pepper seen here was delicious. I confess, I had never seen a pimento outside of a stuffed green olive. It’s a little sweeter than your standard pepper, and this batch at least was quite petite. They’re maybe a couple of inches across, and a gorgeous shiny scarlet. I was originally hoping to stuff them (perhaps with olives – as a friend said, turnabout is fair play) but they didn’t have much of a cavity in the middle. So instead we grilled them up with a bunch of other veg, and they were quite tasty. Since they were more expensive than run-of-the-mill bell peppers, and not wildly different and better, I wouldn’t go out of my way to get them again, but if you happen to get some, they are quite enjoyable.
